Preparation Instructions

Step 1: Prep Seafood and Vegetables

  1. Wash fish fillets and shrimp with vinegar, then rinse thoroughly under cold water. This removes fishy odours and cleans the seafood.

  2. Rinse okra and leave whole (do not chop).

  3. Peel and devein shrimp if necessary.

  4. Dice onion, mince garlic, thyme, and, optionally, chop scotch bonnet pepper.

Step 2: Start Cooking

  1. In a large pot or skillet, combine:

    • 1.5 cups water

    • 36 g butter

    • Diced onion

    • Thyme

    • Maggi seasoning

  2. Bring the mixture to a boil over medium heat.


Step 3: Add Okra and Optional Sides

  1. Add whole okra to the boiling mixture.

  2. If serving with corn or steamed crackers, add them now so they cook in the flavorful broth.

  3. Add the optional scotch bonnet pepper for heat.


Step 4: Add Shrimp

  1. Add shrimp to the boiling mixture.

  2. Cook for around 2 minutes, until shrimps turn pink.


Step 5: Steam the Fish

  1. Place fish fillets on top of shrimp and okra.

  2. Pour some of the broth over the fish.

  3. Cover and steam until fish is cooked, about 5–7 minutes depending on thickness.


Step 6: Serve

  • Divide into 4 portions (~374 g per serving).
